Rhonda’s 4th Birthday Cake


Last Thursday was my little girl’s 4th birthday!! We made it very special for her. We went out to her favorite restaurant 2 days in the roll.

Watching her growing up it’s very overwhelming for me. Sometimes I just wanted her to stop growing!! I’m sure every mum wished for that with your children, lol.

This year I did Frozen decoration with Elsa, Anna and Olaf. One half of the cake was winter and the other half was summer. The frosting and sponge cakes are chocolate. The classic recipe from Rhonda’s great grandmother Bero Cookbook. The ingredients and instructions are very simple.

I didn’t do the instruction’s video this time. We were very busy and did everything at the last minute. So to safe the time and hassle I just did it all by myself with out any help from Rhonda.

It came out quite good and delicious, for people who don’t like a very sweet cake. This cake was not very sweet at all, it was just right for us. In stead of using white refine sugar, I used light brown sugar and the good quality pure butter.

Let me tell you how I made this cake.

Ingredients:

Classic sponge cake:

1 cup of self rising flour

1/2 tbs baking power

1 cup light brown sugar

227 g butter

4 large eggs

1 tsp vanilla extract

2 tbs cocoa powder

1 tbs of water or milk

Classic chocolate buttercream frosting:

227 g soften butter

1/2 cup of icing sugar

3 tbs of cocoa powder

1 tsp vanilla extract

1 tbs hot water

Instructions:

Sponge Cake:

  1. Cream butter and light brown sugar until light and creamy in texture
  2. Beat in eggs one at a time. Then add vanilla extract.
  3. Sift in flour and baking powder.
  4. Mix cocoa powder with water or milk. Add in to the mixture. Mix until it well combined.
  5. Place the mixture into a greased two 9 inch cake tins.
  6. Bake in preheat 180 c oven 30 to 40 minutes.
  7. Let them cool down before frosting.

Buttercream frosting:

  1. Cream soften butter with icing sugar and vanilla extract.
  2. Separate about 1/2 cup of buttercream. Add apple green food color (for green grass)
  3. Adding cocoa powder in to the rest of buttercream.
  4. Gradually stir in boiling water and beat well.
  5. Decorate on top of the chocolate sponge cakes.

Note: I use grass piping tip #133 for green grass decoration.
